Microwave Lemon Pie - cooking recipe
Ingredients

2/3 c. sugar
1/4 tsp. salt
4 Tbsp. cornstarch
1/3 c. reconstituted lemon juice
2 1/2 c. water
2 eggs
4 drops yellow food coloring
1 Tbsp. oleo
Preparation

In bowl safe for microwave, put in sugar, salt and cornstarch mix.
Add lemon juice and eggs.
Beat well.
Add 1/2 cup water. Beat again.
Add the other 2 cups water and food coloring.
Beat again, then put in microwave for 2 minutes.
Take out and beat.
Do this for around 8 minutes.
Beat after every 2 minutes.
It is important to beat it good and be sure to stir it good off the bottom.
Beat in oleo.
Pour into 9-inch baked pie shell.
