Roasted Red Pepper And Feta Cheese Spread - cooking recipe

Ingredients
    1 large red pepper
    8 oz. Feta cheese with basil and tomato
    2 Tbsp. olive oil (extra virgin)
Preparation
    Roast red pepper under the broiler until charred on all sides. Place in a paper bag for 20 minutes.
    Peel, remove seeds, wash and chop finely.
    Crumble Feta cheese in mixing bowl and add red pepper.
    Mix well, adding small amounts of olive oil until blended smoothly.
    Serve with crackers or use as celery stuffing.
