Fresh Vegetable Medley - cooking recipe

Ingredients
    1/2 c. water
    2 Tbsp. butter or margarine
    1/2 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. garlic powder
    3 medium carrots, scraped and cut into 1/4 inch pieces
    2 medium size green peppers, cut into 1/2 inch pieces
    1 large onion, cut into 8 wedges
    2 medium size yellow squash, cut into 1/4 inch slices
    2 medium zucchini, cut into 1/4 inch slices
    1 lb. fresh mushroom, sliced
    1 c. (4 oz.) shredded Cheddar cheese
Preparation
    Combine water, butter, salt, pepper and garlic powder in a Dutch oven; bring to a boil. Add carrots; cover, reduce heat, and simmer 5 minutes. Add green pepper, onion, yellow squash and zucchini; cover and simmer 10 minutes. Stir in mushrooms; cover and simmer 3 to 4 minutes; drain. Place vegetables in a lightly greased 13 x 9 x 2 inch baking dish; sprinkle with cheese. Broil just until cheese melts. Yields 8 servings.
