Fried Rice - cooking recipe

Ingredients
    2 Tbsp. cooking oil
    2 beaten eggs
    1/2 c. diced cooked ham (optional)
    1/4 c. finely chopped fresh mushrooms
    1/4 c. thinly sliced green onion
    3 c. unsalted cooked rice, cooled
    2 c. chopped Chinese cabbage, fried
    2 Tbsp. soy sauce
    salt and pepper
Preparation
    In a large skillet, heat 1 tablespoon oil over medium heat. Add eggs and cook, without stirring, until set.
    Remove eggs and cut into short, narrow strips.
