Ingredients

1 c. Carolina rice (this rice makes the best pudding)
3 c. water
2 eggs
1 c. Eagle Brand condensed milk
1 qt. whole milk
2 tsp. vanilla
1 c. sugar
Preparation

Add rice to boiling water and cover; simmer until all water is gone (approximately 30 minutes).
During waiting period, beat eggs with sugar and add condensed milk and vanilla; beat well. Add mixture to rice.
Turn burner up.
When rice starts to boil, stir and turn down.
Simmer, uncovered, for 35 to 40 minutes.
