Eggplant Fritters - cooking recipe

Ingredients
    1 large eggplant (about 1 1/2 lb.) cut into 1/2-inch slices
    2 Tbsp. olive oil
    1 egg, lightly beaten
    2 cloves garlic, crushed
    4 Tbsp. fresh parsley, chopped
    2 1/4 c. fresh white bread crumbs
    1 c. grated Parmesan cheese
    1 cup Feta cheese, crumbled
    3 Tbsp. flour
    vegetable oil for frying
    salt and pepper
    Plain yogurt (or sour cream) flavored with fried red chilies
    1 lime, cut in wedges
Preparation
    Preheat oven to 375\u00b0.
    Brush eggplant slices with olive oil, place on baking sheet and bake 20 minutes or until golden and tender.
    Chop slices finely and combine in a bowl with egg, garlic, parsley, bread crumbs, Parmesan and Feta.
    Add salt and pepper to taste.
    Let mix stand for 20 minutes.
    If it looks very sloppy, add more bread crumbs.
