Grilled Calypso Chicken - cooking recipe
Ingredients

6 bone-in chicken breast halves (about 3 1/2 lb.)
6 slices Canadian-style bacon
12 small red potatoes (about 1 1/4 lb.), cut in half
1/8 to 1/4 tsp. ground red pepper (cayenne)
1 jar (11.5 oz.) sweet and sour sauce
Preparation

Gently loosen skin from chicken, using fingers, to form pocket between skin and meat.
Place 1 slice bacon in each pocket. Arrange chicken, skin sides up and thickest parts to outside edges, in 3-quart microwavable casserole.
Arrange potatoes around chicken.
Cover with plastic wrap, folding back one corner to vent. Microwave on High 10 to 12 minutes, rotating dish 1/2 turn after 5 minutes, until edges of chicken begin to cook; drain.
Stir red pepper into sauce.
