Zucchini Relish(Makes 8 Pints) - cooking recipe
Ingredients

10 c. ground zucchini (with peel on)
4 c. ground onions
2 to 3 c. ground green peppers
4 to 5 ground carrots
1 1/2 c. ground celery
1/4 c. canning salt
2 1/2 c. cider vinegar
3 1/2 c. sugar
1/2 tsp. pepper
1 tsp. nutmeg
1 tsp. turmeric
2 tsp. celery salt
2 Tbsp. cornstarch
Preparation

Put the first 5 ingredients in large bowl.
Sprinkle with canning salt.
Drain well.
Let stand overnight.
In large kettle, mix remaining ingredients.
Add vegetables.
Bring to a boil.
Put in pint jars.
Process 20 minutes.
