Jambalaya - cooking recipe

Ingredients
    1 stick oleo
    1 chopped onion
    1/2 chopped bell pepper
    3 ribs celery, chopped
    1/4 lb. smoked sausage
    1 1/2 c. diced chicken
    1/2 lb. ham, cubed
    1 1/2 c. tomatoes
    1 c. water or broth (can substitute 1 can tomatoes)
    1 pkg. jambalaya seasoning mix
    1 tsp. herb seasoning with spice
    1 tsp. cajun herb seasoning
    1/4 tsp. black pepper
    salt to taste
    2 Tbsp. gumbo mix
Preparation
    Heat oleo; add sauteed onion and meats.
    Add tomatoes.
    Add rest of vegetables.
    Add seasonings.
    Mix well and cook slowly for 1 hour.
