Cold Chicken With Herbed Mayonnaise - cooking recipe
Ingredients

2 whole chicken breasts, boned and skinned
1 egg, well beaten
1/3 c. oil
1/4 c. milk
1/4 c. finely chopped black olives
1 lemon, sliced thinly
salt
freshly ground black pepper
1 1/2 c. dry bread crumbs
3/4 c. prepared mayonnaise
2 Tbsp. chopped onion
1/4 c. finely chopped parsley
1 tsp. dried tarragon
Preparation

Pound the chicken breasts until thin.
Sprinkle with salt and pepper.
Coat chicken with egg and cover with bread crumbs.
Place on waxed paper and let dry for about 20 minutes.
In a large frying pan, heat the oil and brown the chicken on both sides. Drain on paper towel and let chill.
Mix all other ingredients in a small bowl, except the lemon.
Season to taste.
Serve chicken finished with the sauce and garnished with lemon wedges.
