Ingredients
    2 c. all-purpose flour
    1/4 c. granulated sugar replacement
    1 Tbsp. baking powder
    1/4 tsp. salt
    1/2 c. whole bran cereal
    1/2 c. skim milk
    1 c. ripe banana (about 3), mashed
    1/3 c. Mazola corn oil
    1 egg, lightly beaten
Preparation
    In a small bowl, stir together flour, sugar replacement, baking powder and salt.
    In medium bowl, stir together cereal and milk.
    Let stand 1 to 2 minutes or until cereal softens.
    Stir in bananas, oil and egg until well mixed.
    Stir in flour mixture just until blended.
    Turn into a greased and floured mixture just until blended.
    Turn into a greased and floured 8 x 4 x 2-inch pan. Bake at 350\u00b0 for 1 hour or until cake tester comes out clean. Cool in pan for 10 minutes.
    Remove from pan.
    Cool completely on wire rack.
    Yields 1 loaf, 16 slices.
