Freezer Tomato Sauce - cooking recipe

Ingredients
    20 large tomatoes
    4 c. chopped onions
    4 large carrots, pared and shredded
    1/2 c. chopped parsley
    3 Tbsp. sugar
    2 Tbsp. salt
    3/4 tsp. pepper
Preparation
    Wash and core large
    tomatoes;
    cut into chunks.
    Place in a large kettle, one
    that
    will
    not scorch, along with the chopped onions, carrots,
    parsley,
    sugar,
    salt
    and
    pepper. Bring slowly to a
    boil,
    stirring often to prevent scorching; lower heat and simmer
    for
    30
    minutes,
    or
    until thickened. Cool slightly; then measure three
    cups
    at
    a
    time
    into
    a blender, cover and whirl at high speed until smooth, about one minute. Pour into containers and freeze.
