Arabic Bread(Pita) - cooking recipe

Ingredients
    1 tsp. sugar or honey
    2 c. lukewarm water
    1 (1 Tbsp.) pkg. dry active yeast
    2 tsp. salt
    6 c. whole wheat flour
Preparation
    Dissolve sugar in water in bowl; sprinkle yeast over sugar and water mixture.
    Let stand 10 minutes.
    Combine all ingredients; work into a medium-stiff dough.
    Knead until smooth and elastic (8 to 10 minutes).
    Cover and let rise until doubled in size.
    Form into small balls and roll each
    ball into 1/4-inch thick circles. Cover with a tea towel and let rise again 15 to 30 minutes.
    Heat oven and cookie sheet to 500\u00b0.
    Turn circles of dough over onto hot cookie sheets
    and bake for 2 to 5 minutes (just until they puff up).
    Turn over and bake for a few seconds until light brown on the other side.
    Cool and store in plastic bags or freeze.
