Beans And Rice - cooking recipe

Ingredients
    1 c. black beans, soaked overnight and cooked until soft
    2 Tbsp. olive or vegetable oil
    4 cloves garlic, crushed
    2 large tomatoes, skinned and finely chopped
    1 medium onion, chopped
    1 medium green pepper, chopped
    1 1/4 c. long grain rice
    salt and pepper
Preparation
    Drain the cooked beans and mash 3 tablespoons to a paste with a fork, adding a little water if necessary.
    Heat the oil and fry the onion, garlic and pepper until soft.
    Add the tomatoes and cook for a further 2 minutes.
    Add the bean paste and stir.
    Add the cooked beans and uncooked rice and enough water to cover.
    Bring to a boil.
    Cover and simmer for 20 to 25 minutes until the rice is done.
    Serve hot.
    Preparation time:
    15 minutes.
    Cooking time:
    1 to 1 1/2 hours for the beans and 25 to 30 minutes for the finished dish.
