Quick Blender Pea Soup - cooking recipe

Ingredients
    4 c. skim milk
    2 c. frozen peas, thawed
    4 tsp. flour
    4 tsp. margarine
    2 tsp. salt
    2 Tbsp. fresh onion, grated
    dash of pepper
    1/8 tsp. grated nutmeg (grate from a whole, fresh nutmeg for this amount)
Preparation
    Combine in blender milk and peas, processing until smooth. Melt margarine; add flour and stir until smooth.
    Add to blender with salt, pepper and onion.
    Process again until smooth.
    Pour into saucepan and bring to a boil, stirring occasionally.
    Reduce heat and simmer until mixture thickens, stirring often to keep from sticking.
    Stir in nutmeg.
    Makes 8 servings.
