Chicken And Apricot Stir-Fry - cooking recipe

Ingredients
    1 clove garlic
    2 whole chicken breasts, boned, skinned and cubed
    3 fresh apricots, pitted and sliced
    2 Tbsp. chopped scallions
    3 Tbsp. orange juice
    1 Tbsp. tamari or soy sauce
    1 tsp. cornstarch
Preparation
    Coat a wok or 10-inch skillet with no-stick spray and toss the garlic on medium-high heat for 30 seconds.
    Remove garlic, add chicken and stir-fry for 5 minutes.
    Add apricots and scallions and stir-fry for 1 minute longer.
    Remove chicken and apricots.
