New Orleans Red Beans And Rice - cooking recipe

6 slices bacon (1/4-inch pieces)
2 onions (1/4-inch wedges)
1 garlic clove, minced
1 (14 oz.) can beef broth
1 tsp. thyme (dried)
1 tsp. salt (optional)
1/2 c. green pepper, diced
1 c. Uncle Ben's converted rice
2 cans red kidney beans, drained (16 oz. each)
Preparation

Cook bacon in 10-inch skillet, over medium heat, until brown, but not crisp, about 5 minutes.
Remove bacon from skillet; drain off all but 2 tablespoons drippings.
Add onions and garlic to skillet; cook until onions are tender, but not brown, about 5 minutes.
