Fresh Squash Casserole - cooking recipe
Ingredients

2 lb. fresh yellow squash
1/2 c. diced onions
1/4 c. grated carrots
1 pt. (8 oz.) sour cream
1 pkg. herb seasoned stuffing mix
4 Tbsp. butter or margarine
1 can cream of mushroom soup
Preparation

Slice squash; cook in boiling water with onions for 5 minutes. Mix sour cream and mushroom soup with carrots.
Fold into cooked, drained squash.
Add melted butter (or margarine) to stuffing mix. Line baking dish with this mixture, reserving some for topping. Pour squash mixture into this lined baking dish; bake at 350\u00b0 for 10 minutes.
