Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    3 beaten eggs
    1 large chopped onion
    3/4 lb. pork sausage
    1 c. dry bread crumbs
    1/2 c. buttered cracker crumbs
Preparation
    Pare eggplant; cut into 1-inch cubes.
    Cook in small amount of water until tender (cook until all water is absorbed).
    Brown sausage and onion; add with eggs and bread crumbs to partially cooled eggplant.
    Stir together and put into a greased baking dish.
    Cover with the 1/2 cup of buttered cracker crumbs and bake 30 minutes at 350\u00b0.
