Carrots Au Gratin - cooking recipe

Ingredients
    5 Tbsp. margarine
    1/2 c. cornflake crumbs or Italian bread crumbs
    1/3 c. chopped onion
    3 Tbsp. flour
    1 tsp. pepper
    1 1/2 c. milk
    1 c. shredded Cheddar cheese
    4 c. (approximately 1 1/2 bags) sliced carrots, cooked and drained
    1 Tbsp. parsley
Preparation
    Melt 2 tablespoons of margarine in small pan.
    Remove from heat and mix in crumbs.
    Set aside.
    Melt 3 tablespoons in large pan.
    Add onion and cook until tender.
    Stir in flour, salt and pepper.
    Remove from heat; add milk, gradually stirring until smooth.
    Return to medium heat and cook until thickened, stirring constantly.
    Add cheese; stir until blended.
    Remove from heat. Stir in carrots and parsley.
    Spread in an 8-inch square greased baking dish and sprinkle crumbs evenly over top.
    Bake at 350\u00b0 for about 20 minutes until heated and bubbly.
    Remove from oven.
    Let stand 5 minutes before serving.
    Serves 8.
