Almond Chicken - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    2 whole chicken breasts, halved
    1 (15 oz.) can tomato sauce
    1 (8 oz.) jar peach preserves
    2 Tbsp. chopped onion
    1 1/2 Tbsp. soy sauce
    1/4 tsp. ground ginger
    1/2 c. toasted sliced almonds
Preparation
    In a large skillet, heat oil.
    Add chicken. Brown well.
    Drain fat.
    In a small bowl, combine tomato sauce, preserves, onion, soy sauce and ginger. Blend well.
    Pour sauce over chicken. Cover and simmer 1 hour or until chicken is tender, turning once.
    Place chicken on a serving platter. Spoon sauce over chicken. Garnish with toasted almonds.
