Stuffed Peppers Ala Mike - cooking recipe

Ingredients
    6 bell peppers
    1 c. cooked long grain rice
    salt and pepper to taste
    1/2 c. beef broth
    1 tsp. nutmeg
    1 Tbsp. light brown sugar
    2 lb. ground or chopped meat
    2 Tbsp. sage
    2 eggs
    1 medium onion
    2 Tbsp. oil
    1/2 c. grated Cheddar cheese
Preparation
    Clean peppers.
    Remove seeds and white membrane.
    Blanch in salted boiling water for five minutes.
    Drain and place in greased ovenware dish.
    Peel and dice onion and pepper lids.
