Butter Pecan White Chocolate Truffles - cooking recipe

Ingredients
    8 oz. white chocolate
    6 Tbsp. unsalted butter
    1 1/2 Tbsp. water
    1 egg yolk
    1/2 c. chopped pecans
Preparation
    Melt chocolate, butter and water in the top of a double boiler over hot water, stirring constantly until smooth.
    Pour mixture into mixing bowl; add egg yolk and beat with electric mixer until fluffy and cooled to warm temperature (about 5 minutes).
    Place mixture on flat baking pan and cool in the refrigerator.
    Scrape a spoon across the surface of the mixture and quickly press into small balls.
    Roll balls into nuts and place in a paper candy cup.
    Keep refrigerated until ready to serve.
    Wrap in several thicknesses of aluminum foil to store.
