Canadian Cheese Soup - cooking recipe
Ingredients

1/4 c. butter or margarine
1/2 c. finely diced onions
1/2 c. finely diced carrots
1/2 c. finely diced celery
1/4 c. flour
1 1/2 Tbsp. cornstarch
1 qt. chicken stock or canned chicken broth
1 qt. milk
1/8 tsp. soda
1 c. grated Cheddar cheese
2 tsp. salt
2 Tbsp. parsley, chopped fine
Preparation

Melt butter in 3-quart glass casserole.
Add onions, carrots and celery.
Cover and cook with microwave 12 minutes or until vegetables are tender, stirring every 2 minutes.
Add flour and cornstarch.
Cook 1 1/2 minutes or until bubbly.
Add stock and milk.
Stir until smooth.
Cook 18 minutes, stirring after 12 minutes.
Add soda, cheese and salt.
Cook 3 minutes.
Sprinkle parsley on top to serve.
Recipe yields 8 to 10 servings.
