Chicken Bundles Italian - cooking recipe

2 medium chicken breasts
2 c. sliced green onions
1 Tbsp. olive oil
1 (10 oz.) pkg. frozen chopped spinach
1 c. Ricotta cheese
1/3 c. grated Parmesan cheese
1 tsp. garlic powder
1/4 tsp. dried oregano, crushed
1/4 tsp. ground nutmeg
1/4 tsp. lemon juice
2 tsp. melted butter
8 egg roll wrappers
Preparation

Skin, bone and coarsely chop chicken.
Cook with green onions in hot oil over medium heat until chicken is no longer pink and onions are tender.
In large bowl combine spinach, Ricotta and Parmesan cheeses, garlic, oregano, nutmeg and lemon.
Stir in chicken and onions, salt and pepper to taste.
Lightly grease 8 (10-ounce) custard cups with some melted butter.
Line each cup with egg roll wrappers, allow hangover.
Divide chicken mixture among 8 cups; fold ends over to cover mixture entirely.
Brush with butter.
Press seams to seal.
Bake at 350\u00b0 for 20 to 25 minutes.
