Jerusalem Artichoke Relish - cooking recipe

Ingredients
    3 lb. artichokes
    2 tsp. minced onion
    1 tsp. ground mustard
    2 tsp. ground red pepper
    1 c. sugar
    1 c. white vinegar
    1 c. water
Preparation
    Wash and scrape artichoke tubers.
    Place in sterilized pint size jars.
    Mix other ingredients in saucepan and bring to boil. Pour over artichokes.
    Seal jars.
    Allow to set one month before using.
