Hopkins County (Texas) Stew - cooking recipe
Ingredients

1 chicken, stewed and deboned
2 (1 lb.) cans stewed tomatoes
1 onion, chopped
4 to 5 medium potatoes, chopped
1 Tbsp. chili powder
salt and pepper to taste
1 (1 lb.) can cream-style corn
Preparation

Cook tomatoes and onion in a large stew pot. Add 2 cans water. Cut potatoes into bite-size and cook separately until tender. Add potatoes to tomato mixture. Add salt, pepper and chili powder. Add chicken along with part of chicken stock. Let cook for awhile. Add corn last, stirring often so corn will not stick. Can add a little sugar and margarine, if desired.
