Skillet Eggplant - cooking recipe

Ingredients
    1 eggplant
    1 medium onion, chopped
    4 Tbsp. margarine
    3 medium tomatoes, thinly sliced
    1 1/2 tsp. salt
    1 tsp. oregano
    1/4 tsp. pepper
    1/2 c. sour cream
    2 Tbsp. chopped parsley
Preparation
    Peel eggplant and cut into 1-inch cubes.
    Saute eggplant and onion in butter or margarine in large frying pan for 10 minutes or until barely tender.
    Stir in tomatoes, salt, oregano and pepper; cover.
    Cook slowly over medium heat for 10 minutes or until vegetables are tender.
    Remove from heat.
    Stir in sour cream and parsley.
    Yields 6 servings.
