Round Steak Louisiana - cooking recipe

Ingredients
    4 medium sweet potatoes or yams, peeled and cut
    1 large onion, sliced
    1 medium green pepper, cut in wedges
    1 1/2 lb. beef round steak
    salt
    2 Tbsp. oil
    1 clove garlic, minced
    3 Tbsp. flour
    1 (16 oz.) can tomatoes, cut up
    1/2 c. beef broth
    1 tsp. sugar
    1/2 tsp. thyme, crushed
    1/8 tsp. pepper
Preparation
    Layer sweet potatoes, onion and green peppers in a large crock-pot.
    Cut meat in 6 serving-size pieces.
    Sprinkle with salt and brown in hot oil.
    Transfer meat to crock-pot.
    Reserve drippings in skillet.
    Cook garlic in reserved drippings until tender but not brown.
    Blend in flour.
    Add undrained tomatoes, beef broth, sugar, thyme, pepper and 1/2 teaspoon salt.
    Cook and stir until thickened and bubbly; pour on meat and vegetables.
    Cook on low 6 to 8 hours or high 3 to 4 hours.
    Makes 6 servings.
