Southern Caviar - cooking recipe
Ingredients

3 cans black-eyed peas, drained
1/2 c. finely chopped green pepper
1/2 c. finely chopped red pepper
1 can (2 1/4 oz) diced green chiles, drained
3/4 c. finely chopped onion
2 cloves garlic, minced
1/4 c. red wine vinegar
1/4 c. olive oil
1 Tbsp. Dijon mustard
Tabasco
Salt
Fresh cracked pepper
Chopped fresh parsley
Tortilla chips or melba crackers
Preparation

Combine peas, peppers, onion and garlic.
In separate bowl, whisk together vinegar, oil and mustard; pour over bean mixture. Season with tabasco, salt and pepper.
Mash bean mixture slightly; refrigerate until ready to serve.
Sprinkle with parsley before serving.
