Chicken Marengo - cooking recipe

Ingredients
    8 large chicken pieces (about 3 lb.)
    1/4 c. olive oil
    1 tsp. salt
    1 large can tomatoes
    2 Tbsp. tomato paste
    1/2 c. dry sherry wine
    2 c. mushrooms, sliced
    2 bay leaves
    3 cloves garlic, crushed
    1 (8 oz.) can whole onions
    1 large can pitted ripe olives (whole)
Preparation
    Brown chicken slowly in oil; sprinkle with salt.
    Add tomatoes, tomato paste, sherry wine, mushrooms, bay leaves and garlic.
    Cover; simmer for 20 minutes, until chicken is tender. Uncover.
    Add drained onions and olives; simmer rapidly until sauce is thickened, about 5 minutes.
    Makes about 6 servings.
