Sheila'S Favorite: Chicken Monterey - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    8 slices Monterey Jack cheese
    1 tomato (4 thin slices)
    1 bell pepper (4 thin slices)
    4 Tbsp. margarine
    1/2 tsp. salt
    1/2 tsp. pepper
    1 lemon (optional)
Preparation
    Melt butter in skillet over low flame.
    Add chicken to skillet. Cook over medium flame (uncovered) approximately 7 to 10 minutes. Add salt and pepper.
    Lower flame; add 1 slice of tomato and 1 slice of bell pepper on top of each breast.
    Place 2 slices of cheese over tomato and bell pepper on each breast.
    Cover skillet until cheese is melted.
    Be careful not to overmelt.
    Serves four. Great with rice or noodles.
    For lemon flavor squeeze lemon before serving.
