Tofu-Mushroom Loaf - cooking recipe

Ingredients
    2 Tbsp. oil
    1/2 onion, chopped
    2 cloves garlic, minced
    1 c. fresh mushrooms, sliced
    1 block tofu, crumbled
    1/4 c. green onions, chopped
    1/4 c. grated carrots
    1 tsp. salt
    2 Tbsp. soy sauce
    2 Tbsp. oil
    2 eggs, slightly beaten
    1 c. whole wheat bread crumbs
    1/2 c. grated Monterey Jack cheese
Preparation
    Saute first four ingredients.
    Mix all remaining ingredients except cheese in large bowl.
    Add the onion-mushroom mixture to the tofu mixture, fold gently and spoon into oiled loaf pan.
    Top with Monterey Jack cheese.
    Bake at 350\u00b0 for 30 minutes.
    Serves 6.
