Carrot Ring - cooking recipe

Ingredients
    2 lb. carrots, diced
    1/4 c. Triple Sec or less according to taste
    8 Tbsp. butter, melted or less as desired
    1 tsp. basil
    freshly ground pepper
Preparation
    Cook carrots in water until tender. Drain and mash. Add Triple Sec, melted butter, basil and pepper. Place in buttered ring mold. Refrigerate until ready to bake.
    Cook at 375\u00b0 for 20 minutes. When done fill center with cooked green peas, lima beans or other green vegetable.
    Unmold.
    Serves 6 to 8.
