Cream Of Broccoli Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    1/3 c. diced leeks
    1/3 c. diced onion
    1/3 c. diced celery
    1 c. diced broccoli
    3 Tbsp. flour
    3 c. chicken broth
    salt
    freshly ground pepper
    1/2 tsp. dried thyme
    1/3 c. dry white wine
    1 c. light cream
Preparation
    Melt the butter in a saucepan and add vegetables.
    Saute about 5 minutes over low heat so butter won't burn.
    Sprinkle on flour, mixing well, and add the broth slowly, stirring constantly.
    Cook until it comes to a boil.
    Season with salt and pepper to taste and mix in thyme and wine.
    Let simmer until vegetables are tender, about 20 minutes.
    Puree in blender, return to low heat. Add cream just before serving and heat through.
    Do not boil. Serves 4 or 5.
