Carrot And Coriander Pilaf Salad - cooking recipe

Ingredients
    2 medium sized carrots
    Small head romaine lettuce
    2 Tbsp. olive oil
    1 tsp. minced garlic
    1 cup corsely chopped onion
    1/4 tsp. ground coriander, plus 1/4 tsp. if not using fresh
    1/4 tsp. dried thyme
    1/4 tsp. ground cumin
    1/8 tsp. pepper
    1 cup white rice
    2 cups chicken stock
    1/2 tsp. salt
    1/3 cup chopped fresh cilantro or flat-leaf parsley
Preparation
    Wash and dry carrots.
    Coarsely chop carrots.
    Wash and dry 4 large romaine leaves.
    Place leaves in plastic bag and refrigerate until ready to serve.
