Aroz Saudi(Fragrant Saudi Rice) - cooking recipe

Ingredients
    1 lb. lean meat, cut into 1/2-inch cubes
    3 Tbsp. butter
    1/2 tsp. each, cloves, cinnamon, salt, and pepper
    1 Tbsp. ground cardamom
    1/4 cup chopped onions
    1 Tbsp. crushed garlic
    1/2 Tbsp. melted butter
    1/2 cup raisins
    2 Tbsp. tomato paste
    3 cups Basmati rice, soaked for 15 minutes, then drained
    1/4 cup each, pine nuts and almonds, toasted
Preparation
    Melt butter and brown meat evenly on all sides. Add cloves, cinnamon, salt, pepper and ground cardamom to meat and stir-fry about 10 minutes. Pour three cups boiling water over meat and cover.
    Let cook for one hour on a medium-high heat, until meat is done.
    Measure the broth left in a measuring cup. Add water to have a total of 3-1/2 cups liquid.
