Flounder Rolls With Lemon-Carrot Filling - cooking recipe

Ingredients
    2/3 c. shredded carrots
    1/4 c. sliced green onions
    1/2 c. part-skim Ricotta cheese
    2 Tbsp. chopped fresh parsley
    1 Tbsp. grated lemon rind
    3/4 tsp. dried whole thyme
    1/4 tsp. salt
    1/8 tsp. pepper
    6 flounder fillets (1 1/2 lb.)
    lemon slices
    fresh parsley sprigs
Preparation
    Coat a skillet with vegetable cooking spray.
    Place over medium heat until hot.
    Add carrots and green onions.
    Saute until crisp-tender.
    Remove from heat.
    Add cheese and next 5 ingredients; stir well.
    Set aside.
