Herb Or Spice Jelly - cooking recipe

Ingredients
    3 c. fruit juice
    1/4 to 1/2 c. fresh herb, mint, rose petals or other flavors you like, chopped (if seeds, crushed)
    2 Tbsp. cider vinegar
    food color (optional)
    3 to 3 1/2 c. granulated sugar
    1/2 c. liquid pectin
Preparation
    In a small saucepan over high heat, bring 1 cup fruit juice to a boil.
    Pour over herbs or spice and let stand for 20 minutes; strain into large saucepan.
    Add vinegar, the last 2 cups of fruit juice and coloring (if desired).
    Mix in sugar.
    Bring to a boil. Stir in pectin and boil 1 minute more.
    Remove from heat; skim off foam.
    Pour into hot jars.
    Add sprig or few leaves of herbs.
    Seal jars.
