Shrimp Fajitas(Original Recipe) - cooking recipe
Ingredients

1/2 lb. shrimp, cleaned and chopped or 2 cans medium shrimp
2 zucchini, chopped
1 red pepper (sweet), chopped
1 bunch scallions, minced
1 onion, chopped
2 tomatoes, seeded and chopped
1/8 tsp. jalapeno powder
2 Tbsp. canola oil
1 pinch (1/8 tsp.) fajiti seasoning (optional)
salsa
flour tortillas
Preparation

Heat pan over high heat.
Add oil and heat 10 seconds.
Add shrimp and cook until pink.
Remove from pan.
Add onions and scallions to pan and brown quickly.
Remove from pan.
Add red pepper and brown quickly.
Remove from pan.
Add zucchini and brown quickly.
Remove from pan.
Add tomatoes and brown quickly. Put shrimp and all vegetables back in skillet together with jalapeno powder and fajita seasoning.
Mix well and warm through. Serve on warm tortillas and salsa.
