Rotel Potatoes - cooking recipe

Ingredients
    7 or 8 potatoes, boiled with peel
    1 large green pepper, chopped
    1 large onion, chopped
    1 small can mushrooms, drained and chopped
    1/2 stick oleo
    1 can Ro-Tel tomatoes, chopped
    1 lb. Velveeta cheese, melted
Preparation
    Slice potatoes with peel and place in baking dish. Saute onion, mushrooms and green pepper in oleo. Mix tomatoes and melted cheese with onion mixture and pour over potatoes. Heat in 325\u00b0 oven until cheese is bubbly.
