Michele'S Homemade Potato Leek Soup - cooking recipe

Ingredients
    1/4 c. butter
    2 Tbsp. vegetable oil
    1 medium onion, chopped
    3 medium leeks (whites only)
    6 large potatoes, diced
    1 tsp. pepper
    2 1/2 c. chicken broth
    1 1/4 c. milk
Preparation
    In a large saucepan, heat butter and vegetable oil.
    Add onions, leeks and potatoes until lightly brown, 10 to 12 minutes. Season with salt and pepper.
    Pour in chicken broth and milk. Increase heat and bring to boil, stirring constantly.
    Reduce heat; cover and simmer for approximately 30 minutes or until potatoes are tender.
    Remove and pour through strainer using back of spoon.
    Discard pulp.
    Return to saucepan and simmer for 5 minutes.
    Serve with warm crusty bread.
    Serves 4.
