Huevos Rancheros - cooking recipe

Ingredients
    1/4 c. bacon drippings
    1/4 c. chopped green pepper
    2 Tbsp. chopped onion
    1 (No. 303) can tomatoes
    1/2 tsp. salt
    1/2 tsp. black pepper
    red pepper to taste
    6 eggs
Preparation
    Place bacon drippings in large, cold skillet.
    Heat about one minute on high heat.
    Lower heat to medium.
    Add green peppers and onion and cook three to four minutes, stirring frequently.
    Add tomatoes, salt and both peppers.
    Stir all ingredients together. Bring to a boil on high heat.
    Lower heat to simmer and add eggs, one at a time, making a nest for each in tomato mixture.
    Cover skillet.
    Cook 20 to 25 minutes until eggs are set.
    Serves 4.
