Chicken And Eggplant Stew - cooking recipe

Ingredients
    1 lb. chicken, cubed
    1 onion, chopped
    1 clove garlic, chopped
    1 eggplant, peeled and cubed
    1 bay leaf
    1 large can crushed or whole tomatoes
    1 Tbsp. oregano
    salt and pepper to taste
Preparation
    Brown chicken in oil or butter with onion and garlic.
    In a large pot, add all ingredients and cook until soft, about 45 minutes to 1 hour.
    Serve alone or over noodles or spaghetti.
