Italian Eggplant - cooking recipe
Ingredients

4 slices bacon
1 large onion, chopped
1 eggplant, peeled and cubed
1/4 tsp. pepper
1 (10 oz.) can tomato puree
1 c. water
3/4 c. bread crumbs
3/4 c. grated cheese
1/4 tsp. salt
Preparation

Fry bacon crisp; drain and save for topping.
Saute onion and pepper in drippings.
Remove to paper towel with slotted spoon. Add water, tomato puree and eggplant to skillet.
Cook, covered, 10 minutes.
Add sauteed items to eggplant mixture.
Toss together.
(Mix bread crumbs, bacon,
crumbled and grated cheese for topping.
Put eggplant mixture into a 1 1/2-quart casserole. Place topping over casserole.
Bake at 350\u00b0, uncovered, for 30 minutes.
