Beef Pot Roast With Vegetables - cooking recipe

Ingredients
    1 large beef roast
    1 c. flour
    1 chopped onion
    1 bell pepper
    1/4 c. cooking oil
    salt and pepper to taste
    4 large potatoes
    4 carrots
Preparation
    In large pan on stove top, add 1/4 cup cooking oil.
    Dredge roast with flour, salt and pepper, coating both sides.
    Brown in pot, both sides, on medium heat.
    Add onions and bell pepper.
    Add enough water as meat cooks to keep covered.
    When meat is tender, add potatoes and carrots.
    Cook 20 minutes longer or until vegetables are tender.
