Lemon Cheesecake Pie(No Bake, Easy) - cooking recipe

1 1/2 c evaporated milk (12 oz can)
1 pkg (3 1/2 oz) instant lemon pudding and pie filling mix
2 (8 oz) pkg cream cheese, softened
3/4 c (1 - 6 oz) frozen lemonade concentrate, thawed
1 ready made graham cracker pie crust
1 (8 oz) carton whipped topping, optional
Preparation

In a small mixing bowl, combine evaporated milk and pudding mix; beat 2 minutes. Set aside. In a large mixer bowl, beat cream cheese until light. Gradually add lemonade concentrate; continue beating until smooth, light and fluffy, 3 or 4 minutes. Fold pudding mixture into cream cheese mixtures blending thoroughly. Pour filling into pie crust. Chill at least 3 or 4 hours or over night before serving.
