Ingredients

3 to 4 ripe tomatoes
1 tsp. salt
1/4 tsp. brown mustard
pinch of pepper
1 tsp. chopped parsley
1 tsp. basil
1 tsp. chopped onion
1 tsp. hard-cooked egg (optional)
2 tsp. red wine vinegar
2 to 3 tsp. olive oil
Preparation

Wash tomatoes.
Slice them thinly or cut into wedges.
Place them in a bowl.
Combine the rest of the ingredients; mix thoroughly and pour over tomatoes.
Refrigerate at least 1 hour before serving.
