Sweet Potato Croquettes - cooking recipe
Ingredients

4 large sweet potatoes
1 c. broken pecan meats
1 c. crushed corn flakes
1 heaping Tbsp. flour
1/2 c. sugar or to taste
2 Tbsp. milk
1 tsp. cinnamon
1 tsp. vanilla
1 egg
Bourbon whiskey to taste
1/2 tsp. baking powder
Preparation

Boil potatoes until thoroughly done.
Drain and peel; mash until they are smooth.
Add remaining ingredients and mix well. Shape into croquettes and roll in additional coarse corn flake crumbs.
Place in refrigerator to set.
Fry in hot fat.
Drain. Serves 8.
