Ingredients

1/2 c. orange juice
1/2 c. milk
1 egg
2 Tbsp. salad oil
1 tsp. grated orange peel
1 c. pancake mix
Preparation

Combine orange juice, milk, egg, salad oil and orange peel. Add pancake mix, stirring to remove most of the lumps.
Bake on greased hot griddle.
Turn when bubbles on surface break, flip only once.
Makes 12 to 14 (4-inch) pancakes.
Serve with Whipped Orange Butter or warm maple syrup.
